How to prepare:
Preheat the oven to 220°C or 450°F. In a bowl, mix cauliflower with oil, salt and black pepper. Then spread them on a special oven tray and cook in the oven for 6 to 8 minutes until the cauliflower turns brown but still a little crispy. Set the cauliflower aside to cool.
Put all the ingredients for the sauce in a bowl and mix together. Taste the sauce and add more salt and black pepper if necessary. To make the salad, put the ingredients for the salad together with the cooked cauliflower and their juice in a tray in a bowl. Pour the dressing into the salad bowl and mix well until all the salad ingredients are coated with the dressing.
Taste the salad and add more salt and pepper if needed. If you like, garnish your salad with seeds or nuts and serve.
